Ingredients

- 2 boneless, skinless chicken breasts
- 1 cup orzo pasta
- 2 tbsp Cajun seasoning
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 2 cups chicken broth
- 1/2 cup heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Season chicken breasts with Cajun seasoning.
- Heat olive oil in a large skillet over medium-high heat.
- Cook chicken until browned and fully cooked, about 6 minutes per side.
- Remove chicken and set aside.
- In the same skillet, sauté onion, garlic, and bell pepper until softened.
- Add orzo and toast for 1-2 minutes.
- Pour in chicken broth and bring to a simmer.
- Cook orzo for 8-10 minutes until tender, stirring occasionally.
- Stir in heavy cream.
- Slice chicken and return to skillet.
- Garnish with fresh parsley before serving.

- Substitute heavy cream with coconut milk for a dairy-free option.
