Description

Ingredients

  • 2 salmon fillets (6 oz each)
  • 2 medium potatoes, diced
  • 1 cup broccoli florets
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp dried thyme

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss potatoes with olive oil, salt, pepper, and thyme. Spread on a baking sheet.
  3. Roast potatoes for 20 minutes, flipping halfway.
  4. Add broccoli to the baking sheet and roast for 10 more minutes.
  5. Season salmon with salt, pepper, and garlic powder.
  6. Melt butter in a pan over medium heat. Cook salmon for 3-4 minutes per side.
  7. Serve salmon with roasted potatoes and broccoli.
