Ingredients

- 2 salmon fillets (6 oz each)
- 2 medium potatoes, diced
- 1 cup broccoli florets
- 2 tbsp butter
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp dried thyme
Instructions
- Preheat oven to 400°F (200°C).
- Toss potatoes with olive oil, salt, pepper, and thyme. Spread on a baking sheet.
- Roast potatoes for 20 minutes, flipping halfway.
- Add broccoli to the baking sheet and roast for 10 more minutes.
- Season salmon with salt, pepper, and garlic powder.
- Melt butter in a pan over medium heat. Cook salmon for 3-4 minutes per side.
- Serve salmon with roasted potatoes and broccoli.
Notes
- Use skin-on salmon for extra crispiness.
- Adjust seasoning to your taste.
- Broccoli can be swapped for asparagus or green beans.
