A delicious Thanksgiving appetizer featuring roasted butternut squash on crispy crostini.
Ingredients

- 1 small butternut squash, peeled and cubed
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 baguette, sliced into 1/2-inch pieces
- 2 tbsp butter, melted
- 1/4 cup goat cheese
- 1 tbsp honey
- Fresh thyme for garnish
Instructions
- Preheat oven to 400°F.
- Toss butternut squash with olive oil, salt, and pepper. Roast for 25 minutes.
- Brush baguette slices with melted butter. Toast for 5 minutes.
- Spread goat cheese on toasted crostini.
- Top with roasted butternut squash.
- Drizzle with honey and garnish with thyme.
Notes
- Use pre-cut butternut squash to save time.
- Substitute ricotta for goat cheese if preferred.
- Best served warm.
