Instructions

  1. Preheat oven to 325°F.
  2. Mix graham cracker crumbs and melted butter, press into a springform pan.
  3. Bake crust for 10 minutes, then cool.
  4. Beat cream cheese and sugar until smooth.
  5. Add eggs one at a time, mixing well.
  6. Stir in vanilla, sour cream, cocoa powder, and red food coloring.
  7. Pour filling over crust.
  8. Bake for 50-60 minutes until center is set.
  9. Cool cheesecake in the fridge for 4 hours.
  10. Mix pecans, brown sugar, and melted butter, toast in a pan until caramelized.
  11. Beat powdered sugar, cream cheese, butter, and vanilla for frosting.
  12. Spread frosting on cheesecake, top with caramelized pecans.
