  • 1 lb (450g) boneless chicken thighs, cut into bite-sized pieces
  • 1 cup (240ml) plain yogurt
  • 2 tablespoons lemon juice
  • 2 teaspoons garam masala
  • 1 teaspoon turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt, to taste
  • 2 tablespoons butter
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 can (15 oz) tomato puree
  • 1 cup (240ml) heavy cream
  • Fresh cilantro, for garnish
  • Cooked basmati rice, for serving

Instructions

  1. In a bowl, combine yogurt, lemon juice, garam masala, turmeric, cumin, chili powder, and salt. Add chicken pieces and coat well. Marinate for at least 30 minutes.
  2. In a large skillet, melt butter over medium heat. Add onions and sauté until translucent, about 5 minutes.
  3. Stir in garlic and ginger, and cook for another minute until fragrant.
  4. Add marinated chicken to the skillet. Cook until chicken is no longer pink, about 8-10 minutes.
  5. Stir in tomato puree and bring to a simmer. Reduce heat and cook for 10 minutes.
  6. Add heavy cream and stir to combine. Simmer for an additional 5 minutes until the sauce thickens.
  7. Adjust seasoning with salt to taste. Garnish with fresh cilantro.
  8. Serve hot with cooked basmati rice.

  • For added flavor, use a mix of spices for marinating the chicken.
  • Adjust the level of heat by modifying the amount of chili powder used.
