Ingredients

  • 2 lbs chicken thighs, boneless and skinless
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 cup tomato puree
  • 1 cup coconut milk
  • 1/2 cup butter
  • 2 tablespoons garam masala
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Place chicken, onion, garlic, and ginger in the crockpot.
  2. Add tomato puree, coconut milk, butter, garam masala, cumin, paprika, and salt.
  3. Stir to combine all ingredients.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Once cooked, shred the chicken with two forks and stir to combine.
  6. Garnish with fresh cilantro before serving.
