Ingredients

- 2 lbs chicken thighs, boneless and skinless
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 cup tomato puree
- 1 cup coconut milk
- 1/2 cup butter
- 2 tablespoons garam masala
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Place chicken, onion, garlic, and ginger in the crockpot.
- Add tomato puree, coconut milk, butter, garam masala, cumin, paprika, and salt.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, shred the chicken with two forks and stir to combine.
- Garnish with fresh cilantro before serving.

- Serve with rice or naan.
- Adjust spices to your taste.
- Store leftovers in the refrigerator for up to 3 days.
