Ingredients

  • 8 ounces pasta (your choice)
  • 2 chicken breasts, diced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 cups cherry tomatoes, halved
  • 1/4 cup fresh basil, chopped
  • 1/4 cup balsamic vinegar
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the diced chicken and season with salt and pepper. Cook until the chicken is browned and cooked through, about 6-8 minutes.
  3. Add the minced garlic to the skillet and sauté for 1 minute until fragrant.
  4. Stir in the halved cherry tomatoes and cook for another 2-3 minutes until they begin to soften.
  5. Add the cooked pasta to the skillet, along with the chopped basil and balsamic vinegar. Toss everything together until well combined.
  6. Serve immediately, topped with grated Parmesan cheese.

Notes

  • Feel free to add other vegetables like spinach or bell peppers.
