- 8 ounces pasta (your choice)
- 2 chicken breasts, diced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 2 cups cherry tomatoes, halved
- 1/4 cup fresh basil, chopped
- 1/4 cup balsamic vinegar
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the diced chicken and season with salt and pepper. Cook until the chicken is browned and cooked through, about 6-8 minutes.
- Add the minced garlic to the skillet and sauté for 1 minute until fragrant.
- Stir in the halved cherry tomatoes and cook for another 2-3 minutes until they begin to soften.
- Add the cooked pasta to the skillet, along with the chopped basil and balsamic vinegar. Toss everything together until well combined.
- Serve immediately, topped with grated Parmesan cheese.
Notes
- Feel free to add other vegetables like spinach or bell peppers.
- You can substitute chicken with shrimp for a different flavor.
- This dish can be served warm or cold as a pasta salad.
