Ingredients

  • 1 lb boneless, skinless chicken breasts, cubed
  • 1 tbsp olive oil
  • 1/2 cup brown sugar
  • 1/2 cup pineapple juice
  • 2 tbsp soy sauce
  • 1 tbsp minced garlic
  • 1 tsp ginger, grated
  • 1 cup pineapple chunks, fresh or canned
  • 1 tbsp cornstarch
  • 2 tbsp water
  • Green onions, sliced (for garnish)

Instructions

  1. Heat olive oil in a pan over medium heat. Add chicken and cook until browned.
  2. In a bowl, mix brown sugar, pineapple juice, soy sauce, garlic, and ginger.
  3. Pour the sauce over the chicken and simmer for 5 minutes.
  4. Add pineapple chunks and cook for 2 more minutes.
  5. Mix cornstarch and water, then stir into the pan to thicken the sauce.
  6. Garnish with green onions and serve with rice.
