A quick and flavorful dinner with tender chicken glazed in a sweet and tangy brown sugar pineapple sauce.
Ingredients

- 1 lb boneless, skinless chicken breasts, cubed
- 1 tbsp olive oil
- 1/2 cup brown sugar
- 1/2 cup pineapple juice
- 2 tbsp soy sauce
- 1 tbsp minced garlic
- 1 tsp ginger, grated
- 1 cup pineapple chunks, fresh or canned
- 1 tbsp cornstarch
- 2 tbsp water
- Green onions, sliced (for garnish)
Instructions
- Heat olive oil in a pan over medium heat. Add chicken and cook until browned.
- In a bowl, mix brown sugar, pineapple juice, soy sauce, garlic, and ginger.
- Pour the sauce over the chicken and simmer for 5 minutes.
- Add pineapple chunks and cook for 2 more minutes.
- Mix cornstarch and water, then stir into the pan to thicken the sauce.
- Garnish with green onions and serve with rice.
Notes
- For extra spice, add red pepper flakes.
- Use fresh pineapple for a brighter flavor.
- Store leftovers in an airtight container for up to 3 days.
