Ingredients

  • 1 cup cooked brown rice
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 1 small onion, chopped
  • 1 bell pepper, sliced
  • 1 carrot, julienned
  • 1 cup broccoli florets
  • 1/2 cup tofu or chicken, diced
  • 2 tbsp soy sauce
  • 1 tsp ginger, grated
  • 1/2 tsp black pepper

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add garlic and onion, sauté for 2 minutes.
  3. Add bell pepper, carrot, and broccoli. Stir-fry for 5 minutes.
  4. Add tofu or chicken and cook until done.
  5. Stir in brown rice, soy sauce, ginger, and black pepper.
  6. Cook for another 3 minutes, mixing well.
  7. Serve hot.

Notes

  • Use leftover rice for best texture.
  • Add more vegetables if desired.
