Ingredients

- 1 cup cooked brown rice
- 1 tbsp olive oil
- 1 clove garlic, minced
- 1 small onion, chopped
- 1 bell pepper, sliced
- 1 carrot, julienned
- 1 cup broccoli florets
- 1/2 cup tofu or chicken, diced
- 2 tbsp soy sauce
- 1 tsp ginger, grated
- 1/2 tsp black pepper
Instructions
- Heat olive oil in a pan over medium heat.
- Add garlic and onion, sauté for 2 minutes.
- Add bell pepper, carrot, and broccoli. Stir-fry for 5 minutes.
- Add tofu or chicken and cook until done.
- Stir in brown rice, soy sauce, ginger, and black pepper.
- Cook for another 3 minutes, mixing well.
- Serve hot.
Notes
- Use leftover rice for best texture.
- Add more vegetables if desired.
- Adjust soy sauce to taste.
