Ingredients

  • 4 cups broccoli florets
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 cups shredded sharp cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 2 tablespoons olive oil
  • 1 tablespoon all-purpose flour (optional for thickening)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until soft and translucent.
  2. Add the broccoli florets to the pot and pour in the vegetable broth. Bring to a boil, then reduce heat and simmer for about 10-15 minutes until the broccoli is tender.
  3. Using an immersion blender, blend the soup until smooth. Alternatively, carefully transfer to a blender in batches and blend until smooth.
  4. Return the blended soup to the pot over low heat. Stir in the heavy cream, shredded cheddar cheese, salt, black pepper, and cayenne pepper (if using). Stir until the cheese is melted and the soup is heated through.
  5. If you prefer a thicker soup, in a separate bowl, mix the flour with a little bit of water to create a slurry. Stir this into the soup and cook for an additional few minutes until thickened.
  6. Serve hot, garnished with additional cheddar cheese or croutons if desired.
