A creamy and hearty soup made with broccoli, cheddar cheese, and potatoes.
Ingredients

- 2 cups broccoli florets
- 2 cups diced potatoes
- 1 cup shredded cheddar cheese
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup milk
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- Melt butter in a large pot over medium heat.
- Add chopped onion and garlic, sauté until translucent.
- Add diced potatoes and vegetable broth. Bring to a boil.
- Reduce heat and simmer until potatoes are tender.
- Add broccoli and cook for 5 minutes.
- Blend the soup until smooth, return to pot.
- Stir in milk and cheddar cheese until melted.
- Season with salt and pepper. Serve hot.
Notes
- Use fresh or frozen broccoli.
- Adjust thickness by adding more or less milk.
- Store leftovers in an airtight container in the fridge.
