Soft and fluffy brioche cinnamon rolls with a sweet cinnamon filling and creamy glaze.
Ingredients

- 3 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 packet active dry yeast
- 1/2 cup warm milk
- 3 large eggs
- 1/2 cup unsalted butter, softened
- 1 tsp salt
- 1/2 cup brown sugar
- 2 tbsp ground cinnamon
- 1/4 cup heavy cream (for glaze)
- 1 cup powdered sugar (for glaze)
Instructions
- Mix flour, sugar, yeast, and warm milk in a bowl. Let sit for 5 minutes.
- Add eggs, butter, and salt. Knead until smooth.
- Cover and let rise for 1 hour.
- Roll dough into a rectangle.
- Spread softened butter, then sprinkle brown sugar and cinnamon.
- Roll tightly and slice into 12 pieces.
- Place in a baking dish and let rise for 30 minutes.
- Bake at 350°F for 25 minutes.
- Mix heavy cream and powdered sugar for glaze.
- Drizzle glaze over warm rolls.
Notes
- Use room-temperature butter for best results.
- Let dough rise in a warm place.
- Adjust cinnamon to taste.
