- 4 cups of diced potatoes
- 6 eggs
- 2 cups of shredded cheese
- 1 cup of milk
- 1 teaspoon of salt
- 1/2 teaspoon of pepper
- 1/2 cup of chopped onions
- 1/2 cup of cooked Turkey Turkey Bacon or sausage (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine diced potatoes, eggs, cheese, milk, salt, pepper, onions, and meat if using.
- Mix well until all ingredients are combined.
- Pour the mixture into a greased baking dish.
- Bake for 45-50 minutes until the casserole is set and golden brown on top.
- Let it cool for a few minutes before serving.
Notes
- You can add vegetables like bell peppers or spinach for extra flavor.
- Make it ahead of time and refrigerate overnight.
- Adjust the cheese type based on your preference.
