Instructions
- In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- Heat a non-stick skillet over medium heat and add a small amount of butter.
- Pour the egg mixture into the skillet, and let it cook for about 1 minute.
- Add the chopped spinach and cherry tomatoes to the eggs, gently stirring to combine.
- Sprinkle the shredded cheese on top and cover the skillet with a lid. Cook for an additional 2-3 minutes, or until the eggs are set and the cheese is melted.
- While the eggs are cooking, toast the slices of whole grain bread.
- Serve the scrambled eggs on top of the toasted bread.
