A hearty vegetarian breakfast casserole that is easy to prepare and delicious.
Ingredients

- 6 cups of cubed whole grain bread
- 2 cups of fresh spinach, chopped
- 1 cup of bell peppers, diced
- 1 cup of mushrooms, sliced
- 1 cup of shredded cheese (cheddar or your choice)
- 6 large eggs
- 2 cups of milk
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1 teaspoon of garlic powder
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the bread, spinach, bell peppers, mushrooms, and cheese.
- In another bowl, whisk together eggs, milk, salt, pepper, and garlic powder.
- Pour the egg mixture over the bread mixture and stir well.
- Transfer the mixture to a greased baking dish.
- Bake for 35-40 minutes until the top is golden and the eggs are set.
- Let it cool for a few minutes before serving.
Notes
- Feel free to add other vegetables of your choice.
- Can be made ahead and stored in the refrigerator.
- Reheat in the oven or microwave before serving.
