Tender braised oxtails with Caribbean spices for a rich and flavorful dish.


Ingredients

  • 2 lbs oxtails
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 stalks celery, chopped
  • 1 scotch bonnet pepper
  • 2 tbsp Caribbean spice blend
  • 2 cups beef broth
  • 1 tbsp tomato paste
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Brown oxtails on all sides, then remove and set aside.
  3. Sauté onion, garlic, carrots, and celery until softened.
  4. Add Caribbean spice blend and stir for 1 minute.
  5. Return oxtails to the pot and add beef broth and tomato paste.
  6. Cover and simmer on low heat for 2.5 hours until meat is tender.
  7. Season with salt and pepper to taste.

Notes

  • Adjust the scotch bonnet pepper for desired heat level.
  • Serve with rice or mashed potatoes.
  • For best results, marinate oxtails overnight.
