Ingredients

- 2 lbs oxtails
- 2 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 stalks celery, chopped
- 1 scotch bonnet pepper
- 2 tbsp Caribbean spice blend
- 2 cups beef broth
- 1 tbsp tomato paste
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Brown oxtails on all sides, then remove and set aside.
- Sauté onion, garlic, carrots, and celery until softened.
- Add Caribbean spice blend and stir for 1 minute.
- Return oxtails to the pot and add beef broth and tomato paste.
- Cover and simmer on low heat for 2.5 hours until meat is tender.
- Season with salt and pepper to taste.
Notes
- Adjust the scotch bonnet pepper for desired heat level.
- Serve with rice or mashed potatoes.
- For best results, marinate oxtails overnight.
