Description

Ingredients

  • 2 lbs beef chuck, cubed
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 tbsp tomato paste
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups biscuit dough, prepared

Instructions

  1. Preheat oven to 350°F.
  2. Heat olive oil in a pot over medium-high heat.
  3. Add beef and brown on all sides.
  4. Remove beef and set aside.
  5. Add onion, carrots, celery, and garlic to the pot. Cook until softened.
  6. Return beef to the pot. Add beef broth, tomato paste, thyme, rosemary, salt, and pepper.
  7. Simmer for 1.5 hours until beef is tender.
  8. Transfer beef mixture to a baking dish.
  9. Top with biscuit dough.
  10. Bake for 20 minutes or until biscuits are golden brown.

Notes

  • Use leftover beef for a quicker version.
  • Add peas or mushrooms for extra flavor.
