- 1 boneless prime rib roast (5–7 pounds)
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 450°F (232°C).
- Rub the roast with olive oil, garlic, rosemary, thyme, salt, and pepper.
- Place the roast in a roasting pan, fat side up.
- Roast for 20 minutes at 450°F.
- Reduce the temperature to 325°F (163°C) and cook for an additional 1.5 to 2 hours, or until the internal temperature reaches 130°F (54°C) for medium-rare.
- Remove the roast from the oven and let it rest for 20 minutes before slicing.

- Use a meat thermometer for best results.
