- 1 bone-in prime rib roast (4–5 lbs)
- 2 tbsp olive oil
- 2 tsp kosher salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried rosemary
Instructions
- Preheat your oven to 450°F.
- Pat the roast dry with paper towels.
- Rub olive oil all over the roast.
- Mix salt, pepper, garlic powder, onion powder, and rosemary in a bowl.
- Coat the roast evenly with the spice mix.
- Place the roast bone-side down in a roasting pan.
- Roast for 15 minutes, then reduce heat to 325°F.
- Cook until internal temperature reaches 120°F for rare or 130°F for medium-rare (about 15-20 minutes per pound).
- Remove from oven and let rest for 15 minutes before slicing.

- Letting the roast rest ensures juiciness.
- For a crispier crust, broil for the last 2-3 minutes.
