Ingredients

- 1 bone-in prime rib roast (5–7 pounds)
- Salt (to taste)
- Black pepper (to taste)
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- Fresh rosemary (optional)
- Fresh thyme (optional)
Instructions
- Preheat your oven to 450°F (230°C).
- Season the prime rib with salt and pepper.
- In a bowl, mix garlic with olive oil.
- Rub the garlic mixture over the roast.
- Add rosemary and thyme if desired.
- Place the roast on a rack in a roasting pan.
- Roast for 15 minutes at 450°F, then reduce temperature to 325°F (165°C).
- Cook for about 15-20 minutes per pound for medium-rare.
- Use a meat thermometer to check for an internal temperature of 130°F (54°C).
- Let the roast rest for 20 minutes before slicing.
