Ingredients

- 1 bone-in prime rib roast (4–6 lbs)
- 2 tbsp kosher salt
- 1 tbsp black pepper
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
Instructions
- Preheat oven to 450°F (230°C).
- Mix salt, pepper, olive oil, garlic, rosemary, and thyme in a bowl.
- Rub the mixture evenly over the prime rib roast.
- Place the roast on a rack in a roasting pan, bone-side down.
- Roast at 450°F for 15 minutes.
- Reduce heat to 325°F (165°C) and continue roasting for 1.5-2 hours, or until internal temperature reaches 125°F (52°C) for medium-rare.
- Remove from oven and let rest for 20 minutes before slicing.
Notes
- Use a meat thermometer for accurate doneness.
- Letting the roast rest ensures juiciness.
- For rare, cook to 120°F (49°C). For medium, cook to 135°F (57°C).
