Description
Delicious blueberry crumble bars with a buttery crust and sweet blueberry filling. Perfect for dessert or a snack.
Ingredients

- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 tsp salt
- 1/2 cup unsalted butter, cold and cubed
- 1 large egg
- 2 cups fresh or frozen blueberries
- 1/4 cup lemon juice
- 1/4 cup cornstarch
- 1/2 cup brown sugar
Instructions
- Preheat oven to 375°F (190°C). Line an 8×8-inch baking pan with parchment paper.
- In a bowl, mix flour, granulated sugar, and salt. Cut in cold butter until crumbly. Add egg and mix until dough forms.
- Press half of the dough into the bottom of the pan. Bake for 10 minutes.
- In another bowl, mix blueberries, lemon juice, cornstarch, and brown sugar. Spread over the baked crust.
- Crumble the remaining dough over the blueberry layer. Bake for 25-30 minutes until golden brown.
- Cool completely before cutting into bars.
Notes
- Use fresh blueberries for best results, but frozen work too.
- Store in an airtight container for up to 3 days.
- Serve with vanilla ice cream if desired.
