Ingredients

  • 1 cup fresh blueberries

  • 2 tbsp granulated sugar
  • 1 tsp lemon juice

  • 1 tbsp cornstarch
  • 1 tbsp water
  • Oil for frying

Instructions

  1. In a bowl, mix cream cheese, sugar, lemon juice, and vanilla until smooth.
  2. Gently fold in blueberries.
  3. In a small bowl, mix cornstarch and water to make a paste for sealing the egg rolls.
  4. Place 2 tbsp of filling in the center of each egg roll wrapper.
  5. Fold the sides inward, then roll tightly, sealing the edge with the cornstarch paste.
  6. Heat oil to 350°F and fry egg rolls until golden brown, about 2-3 minutes per side.
  7. Drain on a paper towel-lined plate and serve warm.
