- 3 lb blade roast
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 cup beef broth
- 2 carrots, chopped
- 2 potatoes, chopped
Instructions
- Preheat oven to 325°F.
- Rub the blade roast with olive oil, salt, pepper, garlic powder, and onion powder.
- Place the roast in a roasting pan and add beef broth, carrots, and potatoes around it.
- Cover with foil and roast for 3 hours.
- Remove foil and roast for another 30 minutes to brown the top.
- Let rest for 10 minutes before slicing.
Notes
- Use a meat thermometer to ensure the roast reaches 145°F for medium-rare.
- Add more broth if the pan dries out.
- Letting the roast rest ensures juiciness.
