Delicious blackberry lime cheesecake cupcakes with a creamy filling and fruity topping.
Ingredients

- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 16 oz cream cheese, softened
- 1/2 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 tbsp lime zest
- 2 tbsp lime juice
- 1 cup blackberries, fresh or frozen
- 1/4 cup blackberry jam
Instructions
- Preheat oven to 325°F (165°C). Line a muffin tin with cupcake liners.
- Mix graham cracker crumbs and melted butter. Press into the bottom of each liner.
- Beat cream cheese and sugar until smooth. Add eggs, vanilla, lime zest, and lime juice. Mix well.
- Pour filling over crusts, filling each liner 3/4 full.
- Bake for 20-25 minutes until set. Let cool completely.
- Top with blackberries and a drizzle of blackberry jam before serving.
Notes
- Chill cupcakes for at least 2 hours for best texture.
- Use fresh lime juice for the best flavor.
