- 1 egg

Instructions
- Preheat oven to 400°F (200°C).
- Pierce sweet potatoes with a fork and bake for 45-50 minutes until tender.
- Let cool, then peel and mash the sweet potatoes.
- Mix in egg, salt, pepper, and nutmeg.
- Gradually add flour until a soft dough forms.
- Divide dough into sections and roll into ropes.
- Cut ropes into 1-inch pieces and press with a fork for texture.
- Boil gnocchi in salted water for 2-3 minutes until they float.
- Drain and serve with your favorite sauce.
