- Salt and pepper to taste
- 2 cups mixed vegetables (e.g., green beans, peas)
- 1 cup cooked beans or lentils
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until softened.
- Add garlic and cook for 1 minute.
- Pour in vegetable broth and add diced tomatoes.
- Stir in thyme, basil, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add mixed vegetables and cooked beans. Cook for another 10 minutes.
- Serve hot and enjoy.
