Ingredients

- 1 prime rib roast (4–6 lbs)
- 2 tbsp olive oil
- 2 tsp salt
- 1 tsp black pepper
- 3 cloves garlic, minced
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
Instructions
- Preheat oven to 450°F.
- Rub the roast with olive oil, salt, pepper, garlic, rosemary, and thyme.
- Place roast fat-side up on a rack in a roasting pan.
- Roast for 15 minutes, then reduce heat to 325°F.
- Cook until internal temperature reaches 120°F for rare or 130°F for medium-rare.
- Rest for 15 minutes before slicing.

- Use a meat thermometer for accurate doneness.
- Letting the roast rest ensures juicy meat.
