- 2 lbs (900g) potatoes, peeled and diced
- 1/2 cup mayonnaise
- 1 tbsp Dijon mustard
- 1/4 cup chopped red onion
- 2 hard-boiled eggs, chopped
- 2 stalks celery, diced
- 1 tbsp white vinegar
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp chopped fresh parsley
Instructions
- Boil the potatoes in salted water for 10-12 minutes until tender. Drain and let cool.
- In a large bowl, mix mayonnaise, mustard, vinegar, salt, and pepper.
- Add the cooled potatoes, red onion, eggs, and celery to the bowl.
- Gently toss to coat all ingredients evenly.
- Sprinkle with fresh parsley before serving.
Notes
- For best flavor, refrigerate for at least 1 hour before serving.
- Add diced pickles for extra tanginess.
