Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 can diced tomatoes
- 2 cups beans (canned or cooked)
- 1 teaspoon dried oregano
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until softened.
- Add garlic and cook for 1 minute.
- Pour in broth and add diced tomatoes.
- Stir in beans, oregano, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Let cool before transferring to freezer containers.
Notes
- Label containers with the date and type of soup.
- Freeze for up to 3 months.
- Thaw in the refrigerator before reheating.
