Ingredients

- 3 to 4 pounds chuck roast
- 2 tablespoons olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 4 carrots, chopped
- 4 potatoes, chopped
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 teaspoons dried thyme
- 2 bay leaves
Instructions
- Preheat your oven to 275°F (135°C).
- Heat olive oil in a large Dutch oven over medium-high heat.
- Brown the chuck roast on all sides, about 4-5 minutes per side.
- Remove the roast and set aside.
- Add onion and garlic to the pot, sauté for 2-3 minutes.
- Add carrots and potatoes, stir for another 2 minutes.
- Return the roast to the pot.
- Pour in beef broth and Worcestershire sauce.
- Season with salt, pepper, thyme, and add bay leaves.
- Cover and place in the oven for 4-5 hours, until the meat is tender.
- Remove bay leaves before serving.
Notes
- Cook time may vary based on oven and roast size.
- Allow the roast to rest for 15 minutes before slicing.
- Leftovers can be stored in the fridge for up to 3 days.
