Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 carrots, chopped
  • 4 potatoes, chopped
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 teaspoons dried thyme
  • 2 bay leaves

Instructions

  1. Preheat your oven to 275°F (135°C).
  2. Heat olive oil in a large Dutch oven over medium-high heat.
  3. Brown the chuck roast on all sides, about 4-5 minutes per side.
  4. Remove the roast and set aside.
  5. Add onion and garlic to the pot, sauté for 2-3 minutes.
  6. Add carrots and potatoes, stir for another 2 minutes.
  7. Return the roast to the pot.
  8. Pour in beef broth and Worcestershire sauce.
  9. Season with salt, pepper, thyme, and add bay leaves.
  10. Cover and place in the oven for 4-5 hours, until the meat is tender.
  11. Remove bay leaves before serving.
