Description
A hearty and comforting beef stew made with tender chunks of beef, vegetables, and rich broth.
Ingredients

- 1.5 lbs beef stew meat, cubed
- 2 tbsp olive oil
- 1 onion, chopped
- 3 carrots, sliced
- 3 potatoes, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp flour
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef and brown on all sides, then remove and set aside.
- In the same pot, sauté onion and garlic until softened.
- Stir in tomato paste, thyme, salt, and pepper.
- Sprinkle flour over the mixture and stir well.
- Return beef to the pot and add beef broth.
- Bring to a boil, then reduce heat and simmer for 1.5 hours.
- Add carrots and potatoes, then simmer for another 30 minutes.
- Serve hot.
Notes
- For a thicker stew, mix 1 tbsp cornstarch with 2 tbsp water and stir into the stew before serving.
- Leftovers can be stored in the refrigerator for up to 3 days.
