Description

Ingredients

  • 1.5 lbs beef stew meat, cubed
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp flour

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef and brown on all sides, then remove and set aside.
  3. In the same pot, sauté onion and garlic until softened.
  4. Stir in tomato paste, thyme, salt, and pepper.
  5. Sprinkle flour over the mixture and stir well.
  6. Return beef to the pot and add beef broth.
  7. Bring to a boil, then reduce heat and simmer for 1.5 hours.
  8. Add carrots and potatoes, then simmer for another 30 minutes.
  9. Serve hot.

Notes

  • For a thicker stew, mix 1 tbsp cornstarch with 2 tbsp water and stir into the stew before serving.
  • Leftovers can be stored in the refrigerator for up to 3 days.
