A hearty and comforting beef soup recipe that’s easy to make and packed with flavor.
Ingredients

- 1 lb beef stew meat, cubed
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 cups water
- 1 tbsp tomato paste
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Heat oil in a large pot over medium heat.
- Add beef and cook until browned.
- Add onion, carrots, celery, and garlic. Cook for 5 minutes.
- Stir in beef broth, water, tomato paste, thyme, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Remove bay leaf, season with salt and pepper, and serve.
Notes
- For extra richness, add a splash of red wine.
- You can substitute potatoes for carrots if preferred.
- Store leftovers in the fridge for up to 3 days.
