Description
Beef Wellington is a classic dish featuring tender beef fillet coated with pâté and wrapped in puff pastry.
Ingredients

- 1.5 lbs beef tenderloin
- 2 cups mushrooms, finely chopped
- 4 oz pâté
- 1 package puff pastry (2 sheets)
- 1 egg, beaten
- 2 tbsp Dijon mustard
- 1 tbsp olive oil
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Season the beef with salt and pepper.
- Heat olive oil in a skillet over high heat and sear the beef on all sides for 5 minutes.
- Remove the beef and let it cool.
- In the same skillet, add mushrooms and cook until moisture evaporates.
- Spread Dijon mustard over the cooled beef.
- Layer pâté over the mustard.
- Wrap the beef with mushroom mixture and then with puff pastry.
- Seal edges and brush with beaten egg.
- Bake for 25-30 minutes or until pastry is golden brown.
- Let it rest for 10 minutes before slicing.

- Serve with a side of vegetables.
