Ingredients

  • 1 pound beef stew meat, cubed
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup canned diced tomatoes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 2 potatoes, peeled and cubed
  • 1 cup frozen peas

Instructions

  1. Brown the beef in a large pot over medium heat.
  2. Add the onion, carrots, celery, and garlic. Cook until vegetables soften.
  3. Pour in the beef broth and diced tomatoes. Add salt, pepper, and thyme.
  4. Bring to a boil, then reduce heat and simmer for 45 minutes.
  5. Add potatoes and simmer for another 20 minutes.
  6. Stir in peas and cook for 5 more minutes.
  7. Serve hot.
