Ingredients

- 1 pound beef stew meat, cubed
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup canned diced tomatoes
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 2 potatoes, peeled and cubed
- 1 cup frozen peas
Instructions
- Brown the beef in a large pot over medium heat.
- Add the onion, carrots, celery, and garlic. Cook until vegetables soften.
- Pour in the beef broth and diced tomatoes. Add salt, pepper, and thyme.
- Bring to a boil, then reduce heat and simmer for 45 minutes.
- Add potatoes and simmer for another 20 minutes.
- Stir in peas and cook for 5 more minutes.
- Serve hot.
Notes
- You can use fresh or frozen vegetables.
- Adjust seasoning to your taste.
- Store leftovers in the refrigerator for up to 3 days.
