- 400g beef tortellini
- 200g mushrooms, sliced
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tbsp butter
- 1 tbsp olive oil
- 1 bunch asparagus, trimmed
- Salt and pepper to taste
Instructions
- Bring a pot of salted water to a boil and cook tortellini according to package instructions. Drain and set aside.
- Heat olive oil in a pan over medium heat. Add mushrooms and sauté until golden brown.
- Add minced garlic and cook for 1 minute until fragrant.
- Pour in heavy cream and stir in Parmesan cheese. Simmer until the sauce thickens.
- In a separate pan, melt butter and sauté asparagus until tender, about 5 minutes.
- Toss cooked tortellini in the mushroom sauce. Serve with buttered asparagus on the side.
Notes
- Use fresh mushrooms for the best flavor.
- Adjust creaminess by adding more or less Parmesan.
- For extra richness, add a splash of white wine to the mushroom sauce.
