  • 1 cup heavy cream
  • 1/2 cup beef broth
  • 1 tbsp Dijon mustard
  • 1 tsp thyme, dried

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Season beef tenderloin with salt and pepper.
  3. Heat olive oil in an oven-safe skillet over medium-high heat.
  4. Sear beef on all sides until browned, about 3 minutes per side.
  5. Transfer skillet to the oven and roast for 15-20 minutes for medium-rare.
  6. Remove beef and let rest for 10 minutes.
  7. In the same skillet, melt butter and sauté mushrooms until soft.
  8. Add garlic and cook for 1 minute.
  9. Pour in heavy cream, beef broth, Dijon mustard, and thyme.
  10. Simmer for 5 minutes until sauce thickens.
  11. Slice beef and serve with creamy mushroom sauce.
