- 1/2 cup beef broth
- 1 tbsp Dijon mustard
- 1 tsp thyme, dried
Instructions
- Preheat oven to 400°F (200°C).
- Season beef tenderloin with salt and pepper.
- Heat olive oil in an oven-safe skillet over medium-high heat.
- Sear beef on all sides until browned, about 3 minutes per side.
- Transfer skillet to the oven and roast for 15-20 minutes for medium-rare.
- Remove beef and let rest for 10 minutes.
- In the same skillet, melt butter and sauté mushrooms until soft.
- Add garlic and cook for 1 minute.
- Pour in heavy cream, beef broth, Dijon mustard, and thyme.
- Simmer for 5 minutes until sauce thickens.
- Slice beef and serve with creamy mushroom sauce.
