Instructions
- Preheat your oven to 400°F (200°C).
- Season the beef tenderloin with salt and black pepper.

- Transfer the beef to a baking dish and roast in the oven for 15-20 minutes for medium-rare.

- Add Dijon mustard and heavy cream, stirring until the sauce thickens slightly.
- Toss the mixed vegetables with olive oil, salt, and pepper, then roast in the oven for 15 minutes.
- Slice the beef, drizzle with the garlic Dijon cream sauce, and serve with roasted vegetables.
