Ingredients

  • 500g beef sirloin, sliced thin
  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 200g mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 tbsp Dijon mustard
  • 1 tsp paprika
  • 1 cup beef broth
  • 1 cup sour cream
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pan over medium-high heat.
  2. Add beef slices and cook until browned. Remove and set aside.
  3. In the same pan, sauté onion until soft.
  4. Add mushrooms and garlic, cook until mushrooms are tender.
  5. Stir in mustard and paprika.
  6. Pour in beef broth and bring to a simmer.
  7. Return beef to the pan and cook for 5 minutes.
  8. Reduce heat, stir in sour cream, and simmer for another 2 minutes.
  9. Season with salt and pepper.
  10. Garnish with parsley and serve over noodles or rice.

Notes

  • Use tender cuts of beef for best results.
  • Do not boil after adding sour cream to prevent curdling.
  • For extra flavor, deglaze the pan with a splash of white wine before adding broth.
