Ingredients

  • 1 lb beef sirloin, cut into thin strips
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 cup sour cream
  • Salt and pepper to taste
  • 12 oz egg noodles, cooked according to package instructions
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat olive oil over medium-high heat.
  2. Add the beef strips and cook until browned on all sides. Remove the beef from the skillet and set aside.
  3. In the same skillet, add the chopped onion and garlic. Sauté until the onion is translucent.
  4. Add the sliced mushrooms and cook until they are tender.
  5. Stir in the beef broth, Worcestershire sauce, and Dijon mustard. Bring to a simmer.
  6. Reduce heat and return the beef to the skillet. Stir in the sour cream and season with salt and pepper. Heat through but do not boil.
  7. Serve the beef stroganoff over the cooked egg noodles and garnish with fresh parsley.
