- 1 lb beef sirloin, thinly sliced
- 8 oz egg noodles or fettuccine
- 2 tbsp butter
- 1 tbsp olive oil
- 1 medium onion, finely chopped
- 8 oz mushrooms, sliced
- 2 cloves garlic, minced
- 1 tbsp Dijon mustard
- 1 cup beef broth
- 1 cup sour cream
- 1 tbsp Worcestershire sauce
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- Season beef with salt and pepper. Heat butter and oil in a large skillet over medium-high heat.
- Cook beef until browned, about 2-3 minutes per side. Remove from pan and set aside.
- In the same skillet, sauté onions and mushrooms until softened, about 5 minutes.
- Add garlic and cook for 1 minute until fragrant.
- Stir in Dijon mustard, beef broth, and Worcestershire sauce. Simmer for 5 minutes.
- Reduce heat to low. Stir in sour cream until smooth.
- Return beef to the skillet and simmer for 2 minutes.
- Toss with cooked pasta and garnish with parsley before serving.
Notes
- Use tender cuts like sirloin or ribeye for best results.
- Do not boil the sauce after adding sour cream to prevent curdling.
- Replace sour cream with Greek yogurt for a lighter version.
