Ingredients

  • 2 lbs beef chuck, cut into 1-inch pieces
  • 4 cups beef broth
  • 3 carrots, sliced
  • 2 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Heat a large pot over medium heat.
  2. Add beef and brown on all sides.
  3. Remove beef and add onion and garlic, sauté until soft.
  4. Add tomato paste and stir for 1 minute.
  5. Return beef to pot and add broth, carrots, potatoes, thyme, bay leaf, salt, and pepper.
  6. Bring to a boil, then reduce heat to low.
  7. Cover and simmer for 2 hours or until beef is tender.
  8. Remove bay leaf before serving.
