Description
A hearty beef stew that warms you up.
Ingredients
Scale
- 2 lbs beef chuck, cut into 1-inch pieces
- 4 cups beef broth
- 3 carrots, sliced
- 2 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Heat a large pot over medium heat.
- Add beef and brown on all sides.
- Remove beef and add onion and garlic, sauté until soft.
- Add tomato paste and stir for 1 minute.
- Return beef to pot and add broth, carrots, potatoes, thyme, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 2 hours or until beef is tender.
- Remove bay leaf before serving.
Notes
- Serve with crusty bread.
- Can be made a day ahead for better flavor.
- Freeze leftovers for up to 3 months.
