A hearty and comforting beef stew with vegetables, perfect for a cozy meal.
Ingredients

- 1 lb beef stew meat, cubed
- 2 tbsp vegetable oil
- 1 onion, chopped
- 3 carrots, sliced
- 3 potatoes, diced
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 bay leaf
- 1 cup frozen peas
Instructions
- Heat oil in a large pot over medium heat.
- Add beef and brown on all sides. Remove and set aside.
- In the same pot, sauté onion and garlic until soft.
- Return beef to the pot. Add carrots, potatoes, broth, salt, pepper, thyme, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 1.5 hours or until beef is tender.
- Add peas and cook for 5 more minutes.
- Discard bay leaf before serving.
Notes
- For thicker stew, mix 1 tbsp flour with 2 tbsp water and stir in during the last 10 minutes of cooking.
- Store leftovers in the fridge for up to 3 days.
