Ingredients

  • 1 lb beef stew meat, cubed
  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 bay leaf
  • 1 cup frozen peas

Instructions

  1. Heat oil in a large pot over medium heat.
  2. Add beef and brown on all sides. Remove and set aside.
  3. In the same pot, sauté onion and garlic until soft.
  4. Return beef to the pot. Add carrots, potatoes, broth, salt, pepper, thyme, and bay leaf.
  5. Bring to a boil, then reduce heat and simmer for 1.5 hours or until beef is tender.
  6. Add peas and cook for 5 more minutes.
  7. Discard bay leaf before serving.

Notes

  • For thicker stew, mix 1 tbsp flour with 2 tbsp water and stir in during the last 10 minutes of cooking.
  • Store leftovers in the fridge for up to 3 days.
