Description

Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 bay leaves

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef cubes and brown on all sides.
  3. Remove beef and set aside.
  4. Add onion and garlic to the pot, sauté until soft.
  5. Stir in tomato paste, thyme, salt, and pepper.
  6. Add beef back to the pot along with broth, carrots, potatoes, and bay leaves.
  7. Bring to a boil, then reduce heat to low.
  8. Cover and simmer for 2 hours or until beef is tender.
  9. Remove bay leaves before serving.
