Description

Ingredients

  • 2 lbs beef chuck, cubed
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 potatoes, cubed
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp thyme
  • 2 bay leaves

Instructions

  1. Heat oil in a large pot over medium heat.
  2. Brown the beef cubes on all sides, then remove from the pot.
  3. Add onions and cook until soft.
  4. Return beef to the pot and add carrots, potatoes, broth, tomato paste, salt, pepper, thyme, and bay leaves.
  5. Bring to a boil, then reduce heat and simmer for 2 hours.
  6. Remove bay leaves before serving.
