Description
A hearty beef stew with tender meat and vegetables in a rich broth.
Ingredients

- 2 lbs beef chuck, cubed
- 2 tbsp olive oil
- 1 onion, chopped
- 3 carrots, sliced
- 3 potatoes, cubed
- 4 cups beef broth
- 2 tbsp tomato paste
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp thyme
- 2 bay leaves
Instructions
- Heat oil in a large pot over medium heat.
- Brown the beef cubes on all sides, then remove from the pot.
- Add onions and cook until soft.
- Return beef to the pot and add carrots, potatoes, broth, tomato paste, salt, pepper, thyme, and bay leaves.
- Bring to a boil, then reduce heat and simmer for 2 hours.
- Remove bay leaves before serving.
Notes
- Cut beef into even pieces for uniform cooking.
- Skim off excess fat during cooking.
- Store leftovers in the fridge for up to 3 days.
