Description
A hearty and comforting beef stew made with tender chunks of beef, vegetables, and rich broth.
Ingredients

- 2 pounds beef chuck, cut into 1-inch cubes
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 carrots, sliced
- 3 potatoes, diced
- 2 celery stalks, sliced
- 4 cups beef broth
- 1 cup red wine (optional)
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- In a large pot or Dutch oven, heat the vegetable oil over medium-high heat.
- Add the beef cubes and brown on all sides, about 5-7 minutes. Remove the beef and set aside.
- In the same pot, add the chopped onion and garlic. Cook until the onion is translucent, about 3-4 minutes.
- Add the carrots, potatoes, and celery to the pot. Stir to combine.
- Return the beef to the pot and add the beef broth, red wine (if using), tomato paste, thyme, and bay leaf.
- Bring to a boil, then reduce the heat to low and cover. Simmer for 1.5 to 2 hours, or until the beef is tender.
- Season with salt and pepper to taste. Remove the bay leaf before serving.
- Garnish with chopped fresh parsley and serve hot.
Notes
- For a thicker stew, you can mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir it into the stew during the last 10 minutes of cooking.
- Feel free to add other vegetables like peas or green beans for extra flavor and nutrition.
