beef stew recipe: 1 Perfect way to warm your soul this winter

A hearty and comforting beef stew made with tender chunks of beef, vegetables, and rich broth.


Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 2 celery stalks, sliced
  • 4 cups beef broth
  • 1 cup red wine (optional)
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. In a large pot or Dutch oven, heat the vegetable oil over medium-high heat.
  2. Add the beef cubes and brown on all sides, about 5-7 minutes. Remove the beef and set aside.
  3. In the same pot, add the chopped onion and garlic. Cook until the onion is translucent, about 3-4 minutes.
  4. Add the carrots, potatoes, and celery to the pot. Stir to combine.
  5. Return the beef to the pot and add the beef broth, red wine (if using), tomato paste, thyme, and bay leaf.
  6. Bring to a boil, then reduce the heat to low and cover. Simmer for 1.5 to 2 hours, or until the beef is tender.
  7. Season with salt and pepper to taste. Remove the bay leaf before serving.
  8. Garnish with chopped fresh parsley and serve hot.

Notes

  • For a thicker stew, you can mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir it into the stew during the last 10 minutes of cooking.
  • Feel free to add other vegetables like peas or green beans for extra flavor and nutrition.
