  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Brown the beef in batches and set aside.
  3. Add onions and garlic to the pot; sauté until soft.
  4. Stir in tomato paste, thyme, and bay leaf.
  5. Add beef back to the pot; pour in beef broth.
  6. Bring to a boil, then reduce heat to low.
  7. Add carrots and potatoes; cover and simmer for 2 hours.
  8. Season with salt and pepper before serving.
