Ingredients

  • 1 lb beef stew meat, cubed
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1 cup sour cream
  • Salt and pepper to taste
  • 2 tbsp flour
  • 2 tbsp butter
  • 12 oz egg noodles, cooked
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Brown the beef stew meat on all sides. Remove and set aside.
  2. In the same skillet, melt butter. Add onions and garlic, sauté until softened.
  3. Stir in mushrooms and cook until they release their juices.
  4. Sprinkle flour over the mixture and stir to combine.
  5. Pour in beef broth, Worcestershire sauce, and Dijon mustard. Bring to a simmer.
  6. Return the beef to the skillet. Cover and simmer for 1.5 hours, or until meat is tender.
  7. Stir in sour cream. Heat through but do not boil.
  8. Serve over cooked egg noodles. Garnish with fresh parsley.

Notes

  • For extra richness, use full-fat sour cream.
  • If the sauce is too thick, thin it with a splash of beef broth.
