Description
A hearty beef stew made with tender beef and vegetables.
Ingredients

- 2 lbs beef stew meat
- 4 cups beef broth
- 3 carrots, sliced
- 2 potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp thyme
- 2 bay leaves
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef stew meat and brown on all sides.
- Add onions and garlic, sauté until soft.
- Pour in beef broth and bring to a boil.
- Add carrots, potatoes, salt, pepper, thyme, and bay leaves.
- Reduce heat to low and cover pot.
- Simmer for 1.5 to 2 hours until beef is tender.
- Remove bay leaves before serving.
Notes
- Use fresh herbs for better flavor.
- Serve with crusty bread.
- Store leftovers in the fridge for up to 3 days.
