Ingredients

  • 2 lbs beef stew meat
  • 4 cups beef broth
  • 3 carrots, chopped
  • 3 potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef stew meat and brown on all sides.
  3. Remove meat and set aside.
  4. Add onion and garlic, sauté until soft.
  5. Add carrots, potatoes, and browned beef back to the pot.
  6. Stir in beef broth, tomato paste, thyme, and rosemary.
  7. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
  8. Season with salt and pepper to taste before serving.

Notes

  • For extra flavor, add red wine to the broth.
  • Let the stew sit for a few hours for flavors to meld.
